We let time reveal the full personality of our wines. Aged on fine lees in underground vats, our cuvées take the time to build their balance and complexity. From 8 months for our Muscadet to several years for our finest cuvées, each wine follows its own rhythm. We believe that time is not a constraint, but an ally.

Sur lie aging is a tradition deeply rooted in the Pays Nantais. At Haut Bourg, we let time do its work, gently, in underground vats. At a naturally stable temperature, our Muscadets rest on their fine lees and gradually gain in texture, roundness and depth.

The palate fills out, the aromas grow in complexity, while a precise, mineral freshness remains. Month after month, year after year, the wine transforms, without ever losing its balance. Here, time is not counted: it is tasted.

From our historic vines planted in 1944, Origine du Haut Bourg pushes beyond the usual codes of Muscadet. 100% Melon B., this cuvée benefits from an exceptional nine-year aging on fine lees in underground vats. Far from the immediate, very fresh profile often associated with Muscadet, time brings it an ample body, remarkable depth and a highly complex aromatic palette. The freshness remains, but it is enriched by more evolved notes, a silky texture and a lingering finish. A Muscadet of patience, depth and aging potential, demonstrating all the unsuspected potential of this appellation.

On the nose, Origine du Haut Bourg reveals a highly complex aromatic palette: ripe fruit, candied citrus, notes of dried fruit and honey, mingling with nuances of wax, stone and subtle evolution. On the palate, its ample, silky body, supported by persistent freshness, gives it a true gastronomic dimension. It pairs elegantly with roasted lobster, sole meunière with brown butter, pan-seared scallops with citrus or Bresse poultry with morels. With time, it also marries beautifully with Comté or aged Gouda, whose saline and fruity notes extend its complexity. A wine to discover at the table, to serve as a fine white for gastronomy.

Versatility

Traditional Method. A different standard of rigour.

We craft sparkling wines using the traditional method, a winemaking process in its own right, calling on distinct skills and a different kind of precision.

Some of these cuvées come from our certified organic vineyard. Bubbles that carry the same high standards as our wines for ageing.

The vineyard

Beyond Muscadet.
The same rigour.

Muscadet accounts for 85% of our production. The remaining 15% demand equally precise cellar work. We vinify Sauvignon Blanc, Chardonnay and Grolleau Gris as IGP Val de Loire, wines that demonstrate our mastery of the terroir beyond Melon B. alone.

Merlot and Grolleau round out our production with reds and rosés designed for conviviality. The cellar adapts to the moment of enjoyment: fine gastronomy for our top cuvées, approachability for these wines of pleasure.
